Think fields of flowers, a paradise for bees. This honey was aged in a House Spirits Westward Whiskey barrel. A beautiful straw gold color, the wildflower aroma is bright and delicate with a backbone, sharing the space with the deeper whiskey aroma. The whiskey notes are subtle on the finish and upfront on the nose. The notes of caramel, brown sugar and honeysuckle in the barrel made it difficult to stop coming back for samples. Batch 103 was a perfect marrying of mountain flowers and robust grassy malt and wood character. This is a great gift for the foodie in your life or just that person who wants to elevate their honey game.
